Banana Muffins
Bake 160°C 20 minutes
| 5 ml | baking soda |
| 250 ml | mashed over-ripe banana |
| 125 ml | butter |
| 250 ml | sugar |
| 1 | egg |
| 15 ml | milk |
| 375 ml | flour |
| 5 ml | baking powder |
Add soda to banana, mix and let sit. Beat butter, add sugar, and beat until creamy. Add egg and milk to butter mixture, then blend in banana mixture. Alternate flour and baking powder with banana mixture. Spoon into paper baking cups, 2/3 full. After baked, sprinkle top with sugar while hot (or dip upside-down in bowl of sugar).
